Chipotle chilies are red jalapeños that have undergone a drying and smoking process. However, chilies remain on the bush and are not harvested until they have lost their moisture. By harvesting when it s naturally dry the pod takes on a warm, brown-gray color and stiff exterior. By doing this process it creates an intensive flavor, wonderful when combine.
