Plantain Baskets Topped With Beans

  • 1 cup chopped cabbage
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon grated carrot
  • 1 tablespoon chopped tomato
  • 1/4 teaspoon oregano
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • La Morena Refried Beans 440gr
  • 2 Packs of Green Plantain Baskets


Preheat the oven to 180oC
Grease 6-8 muffin molds with oil and put the plantain basket in each mold.
Bake for 10 minutes, remove from the oven

The coleslaw:

Mixing the chopped cabbage, onion, carrot, tomato, oregano, salt, pepper, olive oil, and lemon, in a bowl.
Heat the fried beans in a pan and serve them inside the plantains baskets, with a tablespoon of coleslaw on top.
