Palmito Salad

Ingredients
- 400gr Latin Deli Palm of Heart coarsely sliced
- 2 small shallots, sliced into rings
- 1 Bunch of chives finely chopped
- 4 Roma tomatoes coarsely chopped
- 4 radishes thinly sliced
- 1 habanero pepper seeded and finely sliced
- 1 large ripe avocado cut into chunks
- 3 tablespoons capers drained
- 1 bunch of coriander about ½ cup finely chopped
For the vinaigrette:
- 2 small lemon juice
- 2 tablespoons sherry vinegar or red wine vinegar
- 3 tablespoons of virgin olive oil
- Salt and pepper to taste.
Preparation
- In a small bowl, whisk together all the ingredients to make the vinaigrette.
- In a larger bowl, mix all the salad ingredients.
- Next, pour the vinaigrette over the salad and mix well so as not to damage the pieces.
- Finish with a pinch of sea salt just before serving. Serve immediately and enjoy!
