This popular arepa sandwich, known as a reina pepiada, has a filling of chicken salad with avocado. Use leftover roasted chicken or poached chicken breast.

Ingredients

  • 4 arepas (see recipe link below)

  • 3/4 cup shredded cooked chicken

  • 1 ripe avocado

  • 1 tablepoon minced onion

  • 3-4 tablespoons mayonnaise

  • Salt and pepper to taste

Preparation

  • Peel and chop the avocado.
  • Mix the chicken, avocado, onion, mayonnaise and salt and pepper (to taste) in a bowl and mix with a fork.
  • Fill each arepa with 1/4 of the filling.a slice of cheese between two arepas. Serve warm.
