This popular arepa sandwich, known as a reina pepiada, has a filling of chicken salad with avocado. Use leftover roasted chicken or poached chicken breast.
Ingredients

4 arepas (see recipe link below)

3/4 cup shredded cooked chicken

1 ripe avocado

1 tablepoon minced onion

3-4 tablespoons mayonnaise

Salt and pepper to taste
Preparation
- Peel and chop the avocado.
- Mix the chicken, avocado, onion, mayonnaise and salt and pepper (to taste) in a bowl and mix with a fork.
- Fill each arepa with 1/4 of the filling.a slice of cheese between two arepas. Serve warm.
